Cake-related PSA
You guys, red velvet cake is just chocolate cake with a boatload of red food coloring in it. It’s really not that difficult to comprehend. I don’t understand why the world collectively freaks out over it. Just go eat some chocolate cake. Good grief.

this explains why i don’t like it.
This is is how red velvet cake is frequently made now, but actually, it used to use only a small amount of cocoa powder processed in such a way that the acid in buttermilk turned it red. With the change in processing for most cocoa powder, that no longer worked, and now you see people using food coloring to make the red color, and often significantly increasing the amount of chocolate.
Yeah, ITT: people getting wound up about shit that is wrong and also inconsequential.
This shouldn’t annoy me as much as it does, but I guess I’m on a pedantic chef flex.
